Goji Berry Superfood Bites



I'm a bit of a fan of superfoods in case you hadn't noticed. So if I can find away to put a few of them into one small raw bite, then I will!

These bites combine some of my favourites including Goji Berries, Chia Seeds, plus nuts and dried strawberries.

Chia seeds are a rich source of Omega 3, fibre and protein and Goji berries are very high in antioxidants compared to other fresh berries. I put chia seeds in my daily oats, or chia puddings, and you can use goji berries in bliss balls, oats or as part of a granola or fruit and nut trail mix.

To top it all off, I used everyone's favourite superfood - Cacao powder to make my own chocolate topping for these bites. As always they're the perfect size for a treat without the guilt of a large dessert.

Goji Berry Superfood Bites

(Serves 6 - mini cheesecake size)

Base

1 Tbsp Goji Berries (soaked in boiling water for 15mins and drained)

1 Tbsp Dried Strawberries

1/2 cup almonds

1 Tbsp desiccated coconut

Give the almonds and coconut a quick blitz until they form a crumb, then add the drained goji berries and strawberries and blend again.

If too dry add a tiny amount of water, if too wet add a little almond meal

Press into the base of silicon holds with your fingers.

Use the remainder to make into bliss balls

Put in the freezer while you make the filling

Filling

1/2 cup fresh chopped strawberries

1 Tbsp goji berries (soaked in boiling water for 15mins and drained)

1 Tbsp coconut sugar or other natural sweetener to taste

1 Tbsp desiccated coconut

1 Tbsp Chia seeds

Add chia seeds, coconut and sugar to a small blender and blitz.

Add strawberries and drained goji and blend again

Allow to sit for 5 mins to swell up a little.

Spoon over bases

Put in the freezer while you make the top

Chocolate topping

1 Tbsp coconut oil (melt if not liquid)

1 Tbsp cacao powder

1 Tbsp Rice Malt Syrup

Mix well and spoon over filling

Use any remaining chocolate by pouring a thin layer into silicon molds and sprinkling with goji berries to make chocolate bark

Place in the freezer for a few hours or overnight to set.

Allow to thaw for 5 minutes before consuming
