Chocolate Gluten Free Vegan Pancakes with White Chocolate Sauce

Chocolate Pancakes never fail, but when they're gluten free, vegan, and refined sugar free, then you know you're on to a good thing. Top them with a white chocolate protein sauce and you'll be nom-noming your way through a delicious breakfast in no time.

Anyway, here's the recipe for the pancakes. You can do all of it, or use elements of it, it's totally up to you.

If you want a variation to the white chocolate sauce, you can also try mixing yoghurt with vanilla protein powder and some vanilla extract to get an equally delicious sauce. Add some water to thin it out if required.

Chocolate Pancakes with White Chocolate Protein Sauce

(Serves 2)

1-2 Tbsp Organic Cacao Powder (Myprotein)

1 flax egg (1 Tbsp Flax Seed powder mixed with 3 Tbsp warm water) (Myprotein)

1 tsp baking powder

1/2 tsp baking soda/bi carb

1/2 tsp apple cider vinegar (if desired for fluffiness)

1 tsp vanilla extract

1/2 coconut oil (or 1 Tbsp yoghurt for moisture)

2 Tbsp Xylitol (more to taste) (Myprotein)

1 cup soy milk (or milk of choice to consistency)

Cook in a non stick pan over medium low for a couple of minutes each side

White Chocolate Protein Sauce

2 Tbsp Organic Cacao Butter Buttons (Myprotein) or use Soy or Coconut Yoghurt

1 Tbsp Vanilla Soy Protein Isolate (Myprotein)

1/2 tsp vanilla extract

7 drops stevia Flavdrops (Myprotein) (or to taste)

If using Cacao Butter Buttons, Melt over a double broiler stirring until blended.

If using yoghurt, just mix, adding water to consistency is required.

Top with fresh fruit if desired
