We all know one one of my favourite vegetables is Beetroot, and of course my beloved Zucchini. So here I have combined the two in one delicious burger stack. The beetroot burger patties themselves are very easy to make, and can be changed to suit your particular tastes just by varying the spices used. If you like your burgers a little more crunchy or textured, then stir through some crushed walnuts or sunflower seeds prior to forming your patties. I always wrap any leftover p
Beetroot as you all know has to be one of my favourite vegetables. So this week I incorporated it into my zucchini base pizza, for extra colour, fibre and flavour. I topped it with a delicious creamy, cheesy, zucchini basil olive pesto sauce! Phew that sounds long. These have to be added to the Childhood Favourite, Indulgent Series! The pancakes themselves are harmless enough, and coloured red with Organic Beetroot Powder. So pretty! I love how adaptable beetroot powder is to so many dishes. But the cashew cream definitely falls into the 'treat' category, and is leftover from my neapolitan cheesecake recipe, just with some cacao powder added. Nom! Very indulgent. Top it with coconut cream, and you have a great start to the school holida
