    I love the spicy tomato base of shakshuka. It's perfect for the colder months, or those nights where you really just need a dish with flavour. The last time I made this dish, was over a year ago, and with the traditional eggs baked inside. But this time I wanted to try a totally vegan version.     How good is a creamy, cheesy pasta sauce! The ultimate in comfort food. Unfortunately they are usually full of a tonne of calories to boot.     Sometimes since changing to plant based eating, I miss the flavour of eggs. So I've found a life saver in the combination of kala namak salt and tofu. Whether it be like this, in quiches, or tofu scrambles. It really hits the spot for those egg cravings.     I think when changing to more plant based eating, Tofu Scramble is probably one of the first things that people try and make.
