Healthy Choc pancakes with a Salted Caramel Sauce.
They have a secret ingredient as well to keep them nice and moist (everyone's favourite word). So good. Testing out mixes of natural sweeteners. This one has Yacon Syrup which is a good substitute for rice malt or maple syrup, plus some granulated stevia . Natural sweeteners have definitely been a life saver since giving up refined sugar. All the fun without the consequences.
Topped with lots of fresh fruit. Another big weekend ahead I'm sure. There are kids everywhere already, and four kids aren't quiet! And it's clouding over after being so hot this week. So fingers crossed we're not all trapped inside all weekend.

Choc Zucchini Pancakes with Salted Caramel Sauce
(Serves 1)
1/2 cup flour (I used half oat & buckwheat)
1/2 zucchini grated (squeeze out liquid)
1/2 Tbsp psyllium powder
1 heaped tsp Maca powder
1 Tbsp cacao powder
3/4 cup almond milk unsweetened
1 tsp Yacon Syrup
1 Tbsp granulated stevia
1/2 tsp bicarbonate soda
1/2 tsp apple cider vinegar
1/2 tsp vanilla extract
Blend in a blender until smooth
Cook in some coconut oil
Salted Caramel Sauce
1 Tbsp Tahini
2 Tbsp rice malt syrup
1/8 tsp pink Himalayan salt
Boiling water to consistency if required
Mix well & pour over pancakes
