Carrot & Apple Pie Oats
Carrot & Apple Pie Oats, and ok it's got zucchini in there too, but you don't have to use that.
Doesn't apple just give an amazing natural sweetness to food. Combined with cinnamon, ginger and nutmeg, it's definitely the dessert you have for breakfast. But so healthy and filling.
I topped with more apple, kiwi, plum, pistachios and coconut. My favourite.

Carrot &Apple Pie Oats
(Serves 1)
1/2 cup oats 1 cup almond coconut milk unsweetened 1 cup water 1 Tbsp coconut sugar 1 carrot finely grated 1/2 zucchini grated (optional) 1/3 cup apple purée or 1/2 apple grated 1 tsp cinnamon 1/4 tsp ginger 1/8 tsp nutmeg 1 tsp Rice malt syrup 1 tsp vanilla extract 1 Tbsp desiccated coconut Cook all ingredients, in saucepan over medium for 5-8mins until thickened. Pour into a bowl Top as desired
