Coconut Fruit Pancakes

Coconut Fruit Pancakes, drizzled with lots of rice malt syrup. A nice simple favourite for this ‪Pancake Sunday morning. I had the biggest craving for coconut and fruit today, so these filled a serious hole. Our clocks went back an hour for daylight savings, so normally that means an extra hour of sleep, but the boys still got up early to play, so that was the end of that! Even the girls got up earlier than normal. Oh well, more time for pancakes, and our Easter Egg hunt, since we didn't get to do it last weekend. The 'hiding' is an art of it's own since the kids are older now, and want more of a challenge. So it's highly entertaining.

Coconut Fruit Pancakes

(Serves 1)

1/2 cup rolled oats 1 Tbsp coconut flour 1 Tbsp desiccated coconut 1/2 banana sliced 3/4 cup coconut water or almond milk 1 Tbsp granulated stevia 1 tsp baking powder 1/2 tsp bicarbonate soda 1/2 tsp apple cider vinegar 1/2 tsp vanilla extract Blend all in a blender until smooth Cook at low heat in a non stick pan, a couple of minutes each side Top with chopped fruit and drizzle with rice malt syrup
