Coconut Fruit Pancakes, drizzled with lots of rice malt syrup. A nice simple favourite for this Pancake Sunday morning. I had the biggest craving for coconut and fruit today, so these filled a serious hole. Our clocks went back an hour for daylight savings, so normally that means an extra hour of sleep, but the boys still got up early to play, so that was the end of that! Even the girls got up earlier than normal. Oh well, more time for pancakes, and our Easter Egg hunt, since we didn't get to do it last weekend. The 'hiding' is an art of it's own since the kids are older now, and want more of a challenge. So it's highly entertaining.
I hope you're all having a great weekend so far.
