Raspberry Kiwi Chia Parfait



Chia Parfaits are so much fun to make, and raspberry and beetroot juice together, just makes the most beautiful pink colour.

Layer this gorgeous chia parfait with some fresh cut kiwi fruit, and top with some raspberries, and you have a delicious breakfast or snack.

 

Raspberry Kiwi Chia Parfait

(Serves 1)

2 Tbsp white chia seeds

1/2 cup coconut water

1/2 cup almond or coconut milk

1/2 tsp vanilla extract

1 Tbsp granulated stevia (to taste)

1/4 cup frozen or fresh raspberries

Squeeze of lime

1 kiwi sliced

Blend the raspberries with the coconut water, vanilla and stevia

Stir in the chia seeds and some beet juice or powder to desired colour (if desired) and a squeeze of lime

Leave in the fridge overnight.

Layer with kiwi and top with more raspberries
