Mango, Tofu & Pear Salad with Almond dressing

How good is salad!?
Even more specifically, how good is fruit in salad, and how good is almond butter!?
All the good things including my favourite fruit, Mango, make this one amazing salad. Topped with poms and a garlic almond butter dressing, you'll be wishing this salad never came to an end
What's your favourite fruit to add to salads?
Mango, Tofu & Pear Salad with Almond dressing
(Serves 1)
Handful each of baby spinach and rocket
1 mango cheek cut into strips
1/2 pear cut into strips
Small handful pomegranate
1 Tbsp almonds
Mango Tofu
50g firm tofu in small cubes
1/4 mango chopped
1 tsp rice malt syrup
2 tsp water
1 tsp coconut oil
Add all ingredients except tofu to a saucepan over high heat mashing mango into a sauce. Turn down the heat and add tofu. Stirring for a few minutes until well coated, sauce is reduced, and heated through.
Almond dressing
(serves 2)
1 Tbsp almond chia spread (or just almond)
1 Tbsp macadamia oil (or olive)
1/2 tsp crushed garlic
Squeeze of lemon juice
1/2 tsp granulated stevia
Mix well and pour over salad
