Vegan Blueberry Vanilla Oatbran Muffins

Vegan Blueberry Vanilla Oatbran Muffins using my favourite natural sweetener by Natvia. I don't bake often, so when I do it's in small quantities that I know I will eat in one week. So these will do nicely as a snack at work this week. I sprinkled them with some Natvia icing mix before serving.

Vegan Blueberry Vanilla Oatbran Muffins
(Serves 4)
1/2 cup oatbran
1 Tbsp coconut flour
1/2 tsp baking powder
1/2 tsp bicarb soda
2 flax eggs (2 Tbsp ground flaxseed with 6 Tbsp water)
1/3 cup yoghurt
1/4 cup granulated stevia (Natvia)
1/2 tsp vanilla extract
1/3 cup frozen blueberries
Mix wet ingredients into dry
Pour into silicon muffin molds
Bake at 180C/350F for 20 mins
Allow to cool before removing from pan
Enjoy!
