Vegan Chocolate Protein Pancakes

Vegan Chocolate Protein Pancakes with dragonfruit and pomegranate using my The Super Elixir Nourishing Protein in Vanilla. The perfect replenishment to my muscles after a Kayla workout. I also added some mesquite and cacao to amp up the superfood content even further.

So fluffy!

I love pancakes, in case you didn't guess that already! and have made a few of them over the years. I never thought eating healthy would mean that I could eat pancakes on a regular basis, and still lose the weight I wanted and gain the muscle tone I desired.

All those years of starving and dieting are such wasted years, but worthwhile I guess, as they got me to this point today. Where my love for food can be enjoyed once more...

Vegan Chocolate Protein Pancakes

(Serves 1)

1/2 cup flour (I used half oat & buckwheat) 1 Tbsp ground flaxseed 3/4 cup almond coconut milk 1 scoop vanilla Nourishing Protein Welleco 1 Tbsp granulated stevia 2 tsp cacao powder 2 tsp mesquite powder 1 tsp baking powder 1/2 tsp bicarbonate soda 1/2 tsp apple cider vinegar 1/2 tsp vanilla extract Blend all in a blender until smooth adding more milk to desired consistency. Allow to sit for 15mins to thicken Add more almond milk to suit Cook at medium low heat in a non stick pan, a couple of minutes each side Top as desired
