Vegan Rocky Road Slice



Rocky Road has to be a childhood favourite for sure. All those marshmallows and chocolate mixed together. Yum. So I've been determined to make the Vegan version for a while now.

I've kept putting it off as I haven't been able to find the time to make my own marshmallows. So the solution came when I found some pre-made vegan marshmallows on my favourite website iHerb.com! Winner!

I buy all sorts of stuff on that site, Quest Bars for my hubby, makeup brushes, vegan supplements. Oh my gosh, so much stuff. And it arrives very quick too, which also suits me, as I have no patience!

So anyway. Like most slices, this is super easy to mix and make. No baking required. Just mix and freeze, so you can't go wrong!

I used a mix of plain Puffed Corn cereal and some rice krispies on top, but you could use crumbled vegan biscuits or nuts instead. I just wanted something with some crunch to balance out the softness of the marshmallows.

Thanks goodness I make these in mini cheesecake size, and they are stored in the freezer, otherwise you will be tempted to eat them all in one sitting. So good!

I always roll any of my leftover base into bliss balls, and store them in the freezer for snacks. I rolled the ones from these in coconut, and then they are there for me when I get the munchies. I'm all for time saving techniques!

Vegan Rocky Road Slice

(Serves 8)

Base

1/4 cup oats

1/2 cup almonds

2 Tbsp cacao

1/3 cup dried dates (chopped and soaked in boiling water for 15mins then drained)

Blend dry ingredients in a food processor. Add drained dates and blend again for a few seconds until crumbly

Press into base of silicon molds

*Use leftover to roll into bliss balls

Filling

2 Tbsp coconut oil

1 Tbsp rice malt syrup

100g dark Choc (I used 85% Lindt)

10-12 vegan marshmallows chopped

1 cup mixed puffed corn and Rice Krispies (or broken vegan biscuits or nuts)

Add oil, rice malt and chocolate to a saucepan and melt over low.

Stir in chopped marshmallows and puffed corn/rice

Spoon mixture over bases and press down. Fill gaps with any loose melted chocolate

Put in the freezer until set

Store and eat from the freezer
