Neapolitan Pancakes with Chocolate Cashew Cream

These have to be added to the Childhood Favourite, Indulgent Series!
The pancakes themselves are harmless enough, and coloured red with Organic Beetroot Powder. So pretty! I love how adaptable beetroot powder is to so many dishes.
But the cashew cream definitely falls into the 'treat' category, and is leftover from my neapolitan cheesecake recipe, just with some cacao powder added. Nom! Very indulgent. Top it with coconut cream, and you have a great start to the school holidays in our house!
The great thing about eating natural whole foods, is that I don't feel guilty eating these things any more. Great ingredients, zero refined sugar, you can't go wrong really.
I use pancake rings to get my pancakes so tall and fluffy inside, and I steam them in a saucepan with a lid on, so that the top gets cooked at the same time. If you don't use these things, the pancakes will just be like normal pancakes. Still good, but I like them this way for the airiness and the look! But don't forget this is just for creativity purposes for myself. This recipe will still be perfectly delicious without all the harmless frivolity!

Neapolitan Pancakes with Chocolate Cashew Cream
(Serves 1-2)
1/4 cup buckwheat flour
1 Tbsp white (or brown) rice flour
2 Tbsp Arrowroot (Tapioca) flour
2 tsp Organic Beetroot Powder (Morlife)
1 egg replacer (Orgran brand) or flax egg
1/2 tsp bicarb soda (baking soda)
1 tsp vanilla extract
1 Tbsp coconut oil
2 Tbsp natural sweetener (to taste)
1/3 cup coconut water, almond milk or water to consistency
Cook in a non stick pan over medium low for a couple of minutes with a lid to steam
(I use pancake rings to get mine super high and fluffy)
Chocolate Cashew Cream
1/3 cup cashews soaked and drained
1 Tbsp granulated stevia or natural sweetener of choice
1 Tbsp coconut oil
1 tsp cacao powder (Morlife)
1/2 tsp vanilla extract
1 Tbsp or more of coconut milk to consistency
Blend until smooth
I topped with whipped coconut cream, fresh fruit, cacao nibs and drizzled with choc sauce
