Lemon Coconut Protein Balls



Protein Balls have been a favourite for the last few years. They're easy to make, and they're great to have on hand for when you have the munchies and want to reach for something healthy and protein packed.

Lemon and Coconut together is such a delicious combo too, and coconut flour is full of fibre. So these are a great snack to store and eat from the freezer, and will fill you up until your next meal.

As every protein powder is different, adjust the sweetener to suit the brand you are using. Plus taste testing along the way is fun!

Lemon Coconut Protein Balls

(Makes 12 Tbsp size balls)

5 Tbsp coconut flour

4 scoops vanilla protein powder

The juice and finely grated rind of 1 lemon

1 tsp vanilla extract

2 Tbsp desiccated coconut (more to roll)

1/2 cup coconut water

2 tsp natural sweetener (granulated stevia, coconut sugar, rice malt syrup) to your taste

Stir ingredients well in a bowl, adding the coconut water slowly until consistency.

Coconut flour absorbs a lot of liquid and swells. So let it sit for a second, before deciding if more liquid is required.

Roll into balls and in more desiccated coconut if desired.

Place in the freezer for a few hours or overnight to harden. Store in the freezer. Allow to thaw for 2 minutes minutes before consuming.
