Tofu Omelette Sandwich

Sometimes since changing to plant based eating, I miss the flavour of eggs. So I've found a life saver in the combination of kala namak salt and tofu. Whether it be like this, in quiches, or tofu scrambles. It really hits the spot for those egg cravings.
Kala Namak salt has a very pungent egg smell to it, and is the perfect replacement for that vegan egg flavour. I buy mine online at iHerb.com, but a lot of Indian Grocers will also sell it. It's known as black salt, but it's actually pink in colour. You only use a very small amount of it, so it should last you a long time. I've used it in other recipes, like my Vegan Carbonara, so take a look at that as well.
Play around with the quantities to suit yourself. It's salt at the end of the day, so use sparingly, otherwise it will be too salty. However if you don't use enough, it won't taste like egg. So change the amounts to suit your own tastebuds!
I had a hankering for a toasted sandwich today, and I wanted something FAST! So this was so quick and easy to pull together using a toaster and a sandwich press.
If you don't have a sandwich press, just cook it in a frypan!

Tofu Omelette Sandwich
(Serves 1)
100g extra firm tofu (pressed) (2 x 50g slices)
1/4 tsp kala namak salt
2 slices of wholegrain bread
A few slices of vegan cheese
Salad fillings - I used Tomato, avocado and baby spinach leaves
Spray a heated sandwich press with coconut oil
Sprinkle the kala namak salt on both sides of each slice of tofu. Approx 1/8 tsp per 50g slice of tofu.
Cook in the sandwich for 3minutes until lightly toasted
Toast your bread if desired
Assemble your sandwich.
