Ombre GF Pancakes
I love me a good vegan pancake stack on a wet day, well, any day is good for pancakes really.
These yummy vegan, gluten free pancakes, are coloured with cooked beetroot, and topped with a beetroot stained sweet yoghurt sauce.
Beetroot is full of fibre and antioxidants, so it's great to find ways of incorporating it in to your meals.
I created the ombre effect just by blending some beetroot with a little water to get it going in a small blender, and then added it to the pancake mix in three stages. A little to get the light pink, a little more to get the medium pink, and the rest to get the dark pink. I also added a little cardamom and vanilla for a nice twist, and for those of you who worry about it tasting beetrooty, then a bit of spice and vanilla covers that up.
I obviously added a lot more of the vegan yoghurt sauce after this, but for the purposes of it not looking like a hot mess, I always add a little for the photos. You could just top with your favourite syrup.

Ombre Beetroot Gluten Free Pancakes
(Serves 1)
1/4 cup buckwheat flour
1 Tbsp rice flour
2 Tbsp Arrowroot (Tapioca) flour
1 egg replacer (Orgran brand) or flax egg
1/2 tsp bicarb soda (baking soda)
75g cooked beetroot (I used Love Beets)
1/2 tsp cardamom
1 tsp vanilla extract
1 Tbsp coconut oil
1/3 cup almond milk (to consistency)
Natural sweetener to taste
Blend the beetroot with a teaspoon of water and set aside
Blend the rest of the ingredients
For the ombre effect, blend in a little of the beetroot mix in stages with the pancake batter
Cook in a non stick pan over medium low for a couple of minutes each side
Pink Yoghurt sauce
2 Tbsp vegan yoghurt
A small amount of beetroot juice to desired colour
Natural sweetener to taste
Mix well
