Ruby Rise Red Papaya Chia Oat Breakfast Parfaits
These Parfaits are super easy to pull together, and are full of the goodness of Ruby Rise Red Papaya, Oats and Chia Seeds. The combination is packed with flavour, vitamins and fibre, and will keep you satisfied for hours.

Plus they're great fun to make with the kids, and I know the pretty presentation always encourages my kids to try new things - and kids eating more fruit and veg is ALWAYS a good thing!

I know a lot of people are a little afraid of Papaya, or confuse it with Paw Paw. Or it's something you eat when you're on holidays - Tropical Island anyone!?
Well why not bring that tropical feel into your home on a more regular basis, and add some Papaya to your menu.
They're great in:
- Overnight Oats or Chia Puddings
- Smoothies and Smoothie Bowls
- Papaya Boats filled with fruit, a thick smoothie, chia pudding or Nicecream
- Curry
- Cheesecakes
- Salads
- Add moisture to baking instead of oil, in place of banana or apple puree (think muffins, cakes, pancakes etc)
- The list goes on...

I think I’ve been eating the oat/chia combination on an almost daily basis for the last few years as part of my healthy eating journey.

All of the layers can be made in advance, and stored in the fridge for three days. So I always make more than one serve, because meal prepping has also been key to my healthy eating journey. Having healthy meals ready to go, really does help you from reaching for unhealthy choices when you’re hungry or in a rush.

Ruby Rise Red Papaya Chia Oat Breakfast Parfait
(Serves 2)
Oat Layer
1 cup oats
1 cup almond milk unsweetened (or milk of choice)
Natural sweetener to taste
1/2 cup water
Mix well. Allow to soak for 30mins or overnight
Add more liquid as required, when ready to serve
Papaya Layer
1/2 Ruby Rise Red Papaya, seeds removed
Chop pulp to desired size
Papaya Chia Layer
1/4 cup chia seeds
2 Tbsp Ruby Rise Red Papaya pulp mashed
1 cup yoghurt (eg coconut, almond, soy)
1/2 tsp vanilla extract (optional)
Natural sweetener to taste (white granulated stevia, xylitol, coconut sugar, maple syrup)
1/2 cup water (as required)
Mix all ingredients in a jar and place in the fridge for 30mins or overnight to swell. Add additional liquid as required prior to serving.
Layer compote in desired pattern
Sprinkle with muesli, nuts or seeds to serve if desired
