Apple Galette

With the Winter Chill in the air, it's hard to beat the smell of Apple Pie cooking in the oven, and that delicious smell wafting through the house.

What's even better than that is creating a recipe using my new favourite apple, appropriately named Envy™ by Montague - the newest and sweetest apple in their range.

I was lucky recently to attend the launch of the new Envy™ apple at a lovely High Tea that I attended with my mum in celebration of Mother's Day.

But even better than an Apple Pie, is an Apple Galette. Why you may ask? It's because they are so forgiving. So even if you aren't the most proficient chef, you basically just fold this in on itself, and call it Rustic! So easy.

So easy in fact, I made not one, but three variations. The main galette using Spelt flour and the other smaller two using Gluten Free flour. Both worked a treat.

Here's a look at the uncooked versions:



On the Spelt galette I used Stevia only as the sweetener and Apricot Jam on the base, and the small galettes I did the apple one with coconut sugar, giving it that baked golden colour, and the Apple & Raspberry I used a mix of the two - both with Raspberry Jam on the base.

The thing I love most about the new Envy™ apple is it's ability to maintain a bright white flesh well after being sliced, making it ideal for snacking, school lunch boxes, salads and platters.

So of course I had to try that out by making a vegan cheese platter


I hope you give this galette a try and adapt it to suit your own tastes.

Apple Galette

(Serves 6-8)

2 cups spelt flour (or all purpose plain flour, or gluten free 1-for-1 flour)

1/2 cup cold coconut oil (or cold butter/vegan)

1/2 tsp cinnamon

3 Tbsp sweetener (stevia, coconut sugar, sugar) (more to sprinkle)

1/8 tsp salt

1-2 Envy™ apples sliced thinly

2 Tbsp apricot jam (or flavour of choice)

1/3 - 1/2 cup ice water

Almond milk to glaze

Place the flour, cinnamon, sweetener and salt in a food processor and pulse for a second

Add the hard coconut oil or butter and 1/3 cup water and pulse a few times until mixed, adding more water as required until it sticks together when pressed

Remove from processor and squeeze into a ball. Wrap in cling wrap and place in the fridge for an hour

Roll the dough out to a 1/3cm thick round (or divide to make smaller galettes)

Spread the jam around the base

Arrange the apples as desired leaving a 5cm border free

Fold the edges in over the apples in a rustic pattern

With a pastry brush, glaze with almond milk

Sprinkle more sweetener over the entire galette

Place in pre-heated oven at 180C/350F for 30 minutes
